Super veggie quesadilla

Words cannot express how excited I was when I FINALLY found this recipe.  I lived in Seattle for a year, and during my time there I would always swing by the farmers market on my way home from work each Saturday.  This was always the highlight of my trip!  I knew they had a cookbook, so I knew the recipe must be out there somewhere!  I found an article here and here and I meshed them together a bit and came up with this!  Please reference the links of the actual recipes, I want to give credit where credit is due!

What you’ll need: tortillas, cheese, greens (I used cabbage and kale), onions, beets, squash (I used acorn and zucchini), cumin, salt, oregano, chili powder, canola oil


Step 1: Chop the veggies and greens.  I use a mandolin but PLEASE be careful, yes it gives nice thinly sliced pieces but I have a love/hate relationship because I have sliced my finger a time or two



Step 2: Add the veggies to a heated pan with the canola oil, cook about 5 minutes


Step 3: Add greens, spices, and water, cook an additional 5ish minutes



Step 4: Move the cooked veggie mix into a bowl, spray the pan with a nonstick spray, add tortilla. On half the tortilla add cheese, a scoop of veggies, and more cheese!  Fold over and cook each side 1-2 minutes



Step 5: Slide onto a plate, slice into smaller pieces (I use a pizza cutter) and enjoy!
